A bright, delicate set dessert
A smooth, lightly sweetened gelatin dessert made with food-grade horse gelatin and fresh raspberry flavor. It is clean, refreshing, and easy to prepare ahead of time.
Place the cold water in a small bowl. Sprinkle the horse gelatin evenly over the surface and leave it undisturbed for 5 minutes to hydrate.
Combine the boiling water, raspberry juice, sugar, and lemon juice in a saucepan. Stir until the sugar dissolves. Do not boil the mixture.
Add the bloomed gelatin to the warm raspberry base. Whisk gently for 1–2 minutes, until no granules remain and the liquid looks clear.
Arrange the fresh raspberries in a lightly rinsed 1.2-liter mold. Pour the gelatin mixture over the fruit, then let it cool for 10 minutes at room temperature.
Cover the mold and refrigerate for at least 4 hours, preferably overnight, until the center is firm.
Dip the outside of the mold in warm water for 5–8 seconds. Invert onto a serving plate, loosen the edges gently, and serve cold.
Check the product label for the correct setting strength, since gelatin powders can vary. Keep the finished dessert refrigerated and consume within 2 days.
